This process actually destroys a large amount of the anti-oxidants and flavonoids that give Cacao its nutritional value. We have sourced Cacao Powder that will never need this nutrient destroying process. With its lack of bitterness, slight fruity flavour, delectable aroma and pure chocolate taste it is second to none.
Cacao Powder originally comes from the bean (or fruit) of the Theobroma Cacao tree. Cacao Powder contains high amounts of essential fats, carbohydrates, proteins, vitamins, fibre and minerals. Our Cacao Powder is sourced from a fairly traded, organic, family owned farm in Venezuela, South America. Our Cacao is grown with minimal human intervention and harvested by hand to prevent deforestation of the Amazonian rainforest; a cause close to our heart. The secret to our Cacao Powder’s smooth taste is the unique processing of the Cacao beans. Each fortnight, the Cacao trees are pruned by hand and when the cacao pods have completely ripened they are handpicked from the trees. The pods are then cut open and the Cacao pulp and beans are collected. These are left in wooden crates for a few days so the pulp can ferment, the beans are then left out to dry naturally in the sun. When the beans are ready they are ground down, the cacao butter is collected and all that is left is our pure, raw and delicious Cacao Powder.
